Spiralized Breakfast Pizza

I'm forever looking for ways to simplify breakfast. It's easy to find sweet breakfast dishes - muffins, donuts, breads - but savory food prepping for breakfast takes a little more effort.

Enter this delicious spiralized breakfast pizza. The potatoes take on a crispy, hash brown consistency, which is my favorite part of breakfast. Topped with slightly runny eggs, crisp bacon, and sliced jalopenos, there is just enough heat to wake you up.

Spiralized Breakfast Pizza

  • 2 russet potatoes, spiralized
  • 1 tsp garlic powder
  • 1 tbs chopped parsley
  • 4 eggs
  • 4 slices cooked bacon, chopped
  • 1 jalapeno, sliced
  • salt and pepper to taste
  1. In a cast-iron skillet over medium-high heat, cook olive oil.
  2. Once the skillet is warm, add in your spiralized potatoes, garlic powder, parsley, salt and pepper, tossing for 3 minutes as they heat.
  3. Using a spatula, press the potatoes down into a flat layer. Continue to heat for another 3 - 5 minutes, or until the bottom is browned.
  4. With the help of your spatula, flip the spiralized potatoes and cook the other side for 3 minutes.
  5. Crack your eggs on top of the potatoes and bake in the oven for 15 minutes.
  6. Top dish with crumbled bacon and jalapenos.
