Balsamic Bacon Brussel Sprouts

When I was a kid, I remember long nights of sitting at the dinner table not being allowed to get up until I finished all of the vegetables on my plate. Even with mounds of ketchup to dunk my green beans in, I still fought and wined to try to get out of eating the nasty green veggies. 

But that's probably because no one told my adolescent self that I could put bacon in with my veggies. Yes, you read that correctly. BACON. They say this whole "adulting" thing is supposed to be hard, but when there is bacon in your vegetables, how tough can life be?

I paired this tasty side with my bruschetta chicken and it was the perfect, simple meal for my Monday night. The bacon and balsamic are a heavenly duo and will distract you from the fact that you're eating something as healthy as brussel sprouts.

Balsamic Bacon Brussel Sprouts

- brussel sprouts
- 8 slices of bacon, uncooked
- balsamic vinegar
- 1 tsp minced garlic
- salt and pepper

1. Preheat the oven to 350 degrees and cover your baking sheet with foil.
2. Rinse and pat dry your brussel sprouts. Cut the ends off and place the brussel sprouts in a bowl. 
3. Chop up the bacon into small pieces, adding it to the bowl of brussel sprouts.
4. Add the balsamic vinegar, minced garlic, and salt and pepper to taste. For the balsamic vinegar, add enough to coat all of the brussel sprouts. Mix all of the ingredients until thoroughly combined.
5. Place in the over for 20 minutes until they're cooked, stirring the brussel sprouts half way through.
