Citrus Pork Tacos

Ever have those days where work was just dumb, you're exhausted and the last thing you want to do is adult enough to throw a tasty meal together? That was my Wednesday night. My solution? This meal.

I had big plans for this meal of how I was going to prepare it but once I got home from a trying day, the last thing I wanted to do was be in the kitchen for an hour carefully piecing everything together. So instead I threw everything together in one pan and SURPRISE it was the tastiest dish ever. And ever better: I was able to create His & Her versions of this meal. Lettuce wraps for me and tortillas for the husband; everyone's happy.

Citrus Pork Tacos

- 2 lbs ground pork
- 1/2 cup citrus jam (I used Urban Canning Co's Spring Onion Orange + Thyme Jam)
- 1/2 cup orange juice
- 1/2 onion
- 1 can fiesta corn
- 1 can black beans
- 3 tsp cumin
- 3 tsp chili powder
- 2 tsp minced garlic
- Juice from one lime
- Olive oil
- Tortillas
- Romaine lettuce

Optional toppings:
- Cheese
- Guacamole
- Cholula Sour Cream

1. In a large skillet, heat the olive oil over medium high heat and brown the pork.
2. Add in the onion, seasonings, garlic, jam, orange juice, and lime juice. Stir until thoroughly combined.
3. Stir in the corn and black beans.
4. Spoon your mixture into your tortillas or lettuce boats and top with your preferred toppings.
