Healthy Buffalo Chicken Bites

Ever have those days where you don't know what to make for dinner so you just decide to throw together whatever you can find? This was one of those meals. The buffalo sauce was calling my name from the fridge so I wanted to find a recipe to use it for.

What better way than with healthy boneless baked buffalo chicken bites? Try saying that 10 times fast. But for real: they're healthy and covered in two layers of baked deliciousness all under a coat of buffalo sauce. Basically all of your football game watching, happy husband/boyfriend/self, delicious snack dreams come true.

Healthy Buffalo Chicken Bites
2 boneless, skinless chicken breasts
1 cup buffalo sauce
1 cup whole wheat flour
1/2 cup bread crumbs
1/4 cup milk
1 egg
2 tbs butter
1/2 tsp black pepper
1/4 tsp garlic powder
1/4 tsp red pepper

1. Preheat the oven to 475 degrees. Cover a baking sheet with foil and spray with olive oil. Combine the flour, bread crumbs, and seasonings in a bowl. In a separate bowl, beat the egg and milk together. 
2. Cut your chicken into bite sized pieces. Dip each piece of chicken into the egg mixture, then the flour mixture, then again in the egg and flour mixtures before placing on the baking sheet. Repeat for each piece of chicken. Bake for 8 - 10 minutes or until the pieces are golden brown. Once they're brown, flip over each piece and bake for an additional 3 minutes.
3. While the chicken finishes baking, pour your buffalo sauce, butter, and about 2 tbs of water into a bowl. Microwave to melt the butter, stirring to combine.
4. Once your chicken is cooked, pull it out of the oven and let it sit for a couple minutes. Dip each piece of chicken into the buffalo sauce to coat. Let it cool for another couple of minutes before you eat.
