Pumpkin Chocolate Chip Oat Bars

I'm so ashamed of myself. I call myself a lover of all things pumpkin, but yet have somehow managed to make it all the way to November 12th without posting a pumpkin recipe. Maybe it's the lack of fall weather that is keeping all the pumpkin recipe creativity from flowing. (Um, 84 degrees today? Ugh.)

That all ends today. I've been hoarding the ingredients for this breakfast treat in my kitchen for weeks. And I know what you're thinking: there are an awful lot of chocolate chips in that picture up there for a breakfast recipe. But I'm an adult, so I do what I want, which means eating chocolate chips in my breakfast foods. So I invite you to step into adulthood and try these delicious pumpkin chocolate chip oat bars. Or if that's living a little too dangerously for you, eat them for dessert. Either way, they're still tasty.

Pumpkin Chocolate Chip Oat Bars

- 2 1/2 cups oats
- 1 cup pumpkin
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 cup chocolate chips
- 2 tbs coconut oil, melted
- 1/2 cup unsweetened applesauce
- 6 tbs brown sugar

1. Grease your baking dish. I used a smaller dish (9 x 7) so I'd have thicker bars. Preheat the oven to 350 degrees.
2. In a bowl, combine the pumpkin and applesauce and mix until thoroughly combined.
3. In a separate bowl, combine the baking powder, cinnamon and brown sugar, and mix.
4. Combine your pumpkin applesauce combo with the dry ingredients, mixing thoroughly. Then add in the oil and oats and stir until all oats are coated.
5. Once the mixture is combined, add in the chocolate chips, making sure they're distributed throughout the oats.
6. Spread the mixture evenly in your dish and pop it in the oven. If you used a smaller dish like I did, it takes about 20 minutes to bake. If you use a larger dish, keep an eye on it so it doesn't over bake.
