Pumpkin Bread with Maple Glaze

Ingredients

  • 1/3 c. sugar

  • 1/4 c. coconut oil, softened

  • 2 eggs

  • 1/4 c. plain Greek yogurt

  • 1 c. flour

  • 1 Tbs pumpkin pie spice

  • 1 tsp. cinnamon

  • 1 tsp. vanilla

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

For the glaze:

  • 1 c. powdered sugar

  • 2 Tbs. maple syrup

  • 1 Tbs. milk (or more as needed; can also use almond milk)

Instructions

  1. Preheat the oven to 350 degrees and grease your bread pan. (You can also cut up some parchment paper to line along the bottom of your pan to ensure the bread is easy to remove).

  2. In a large bowl, combine your sugar and coconut oil and mix.

  3. Add in your eggs, pumpkin, yogurt, and vanilla.

  4. In another smaller bowl, combine your flour, baking soda, salt, cinnamon, and pumpkin pie spice.

  5. Pour your flour mixture into your wet ingredients, with the mixer still running on low.

  6. Once fully incorporated, pour your batter into your pan.

  7. Bake for 50 minutes, or until an inserted toothpick comes out clean.

  8. While the bread is baking, prepare the glaze. Combine all of the ingredients in a small bowl, mixing until there are no lumps remaining.

  9. Once the bread has cooled for 5 minutes, drizzle the glaze over-top and allow to set before cutting and serving.
