If you live anywhere else other than Florida, you're probably used to frigid temps this time of year. Us Floridians have had one of the coldest winters yet and we're only in the second week of January. The heater in our home has never had to work this hard.

This cold weather already has me dreaming of tropical temps and sunny, warm days. Since I still have a few months before I'll put on a bathing suit and head to the beach, I'm keeping the daydreaming to my food.

These energy balls are full of citrus and tropical flavors and will have you daydreaming of warm tropical days. They're easy to throw together in the food processor or blender and are the perfect protein snack to get you through an afternoon slump.

Whole 30 Coconut Lime Energy Bites

Servings

20 balls

Prep Time

15 minutes

Ingredients

  • 1 c. almonds or cashews

  • 1 c. pitted dates

  • 1/2 c. shredded unsweetened coconut

  • Juice & zest of 1 - 2 limes

Instructions

  1. Add the nuts, dates, coconut, and lime* to a food processor and blend until a crumble is formed.

  2. Check the crumble. If it doesn't stick together, add the juice and zest of the second lime and pulse again.

  3. Roll the mixture into 1" balls, rolling each in shredded coconut if desired.

  4. Store in the fridge or freezer.

*Start with the juice and zest of 1 lime.
