Pumpkin Chocolate Chip Muffins

Ingredients

  • 1 1/4 c. almond flour

  • 2 1/2 Tbs. coconut flour

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

  • 1 Tbs pumpkin pie spice

  • 2 eggs

  • 5 Tbs coconut oil, melted

  • 1/3 c. honey

  • 2 tsp. vanilla extract

  • 1/2 c. pumpkin puree

  • 1 c. dairy-free chocolate chips

Instructions

  1. Preheat the oven to 350 degrees and grease a muffin tin.

  2. In a medium bowl, combine the flours, baking soda, salt, and pumpkin pie spice.

  3. In a separate bowl, combine the eggs, coconut oil, honey, vanilla, and pumpkin puree.

  4. Add your pumpkin mixture to the bowl of the flour mixture, stirring until there are no dry spots.

  5. fold in the chocolate chips.

  6. Fill your muffin tin evenly, making 8 muffins.

  7. Bake for 25 minutes, at which point the tops of your muffins will be light brown and an inserted toothpick would come out clean.

  8. Allow the muffins to cool completely before removing from the muffin tin.
