Apple, Sweet Potato and Sausage Bowl

 

Nine times out of ten, if my meal has the option to be consumed out of a bowl, I'm going to opt for the bowl. Even if that means having to clean a dish as opposed to throwing away a paper plate? Yes, even then.

 
 

Call me crazy, but I get way more pumped for a meal when I'm eating it out of a bowl. Maybe it's the fact that all of the foods are mixed together and there are no invisible barriers from one item on my plate to the next. Or maybe it's that bowls usually mean there are more ingredients and flavors included. Or maybe it's just that the best things in life are typically served in bowls: burrito bowls from Chipotle, ice cream sundaes from any ice cream parlor ever, and now this bowl.

 
 

The other great thing about this bowl? It doesn't conform to any one meal time of the day. While loaded with sweet potatoes, apple chunks, chicken sausage, spinach and egg, we originally ate it for dinner. Leftovers were consumed for lunch. Us Weir's are equal opportunity eaters and welcome all meals to be consumed for any meal at any time of day.

 

Apple, Sweet Potato and Sausage Bowl

  • 2 links of chicken sausage, diced
  • 2 sweet potatoes, diced
  • 4 eggs
  • 2 cloves of garlic
  • 1/2 red onion, diced
  • 1 apple, chopped
  • 2 handfuls of fresh spinach
  • Olive oil
  • Salt and pepper
  1. In a large skillet, heat up olive oil and garlic until fragrant.
  2. Add the sweet potatoes and onion to the skillet, and cook until softened and heated through.
  3. Add the diced sausage and heat through.
  4. Create wells inside the large skillet and crack your eggs, cooking until over easy.
  5. Add in the chopped apple, spinach, and desired salt and pepper. Continue cooking until the spinach is wilted.
