Bacon Dijon Sweet Potato Salad

Now that Memorial Day is behind us, it is the official start of summer! Granted, being in Florida it has already felt like summer for the past two months, but now we enter the season where we all begin to question why we still live in the Sunshine state with it's 90% humidity.

Summer also means BBQing. With it being Andy and I's first full summer in our new home, I think it's time we invest in a grill so we can take advantage of this grilling weather for the months to come. For now, we get by with fake grilling on the stove.

And what does every good BBQ need? Delicious side dishes. Andy isn't a fan of potato salad because it generally contains the one food item he won't go near: mayonnaise. With a goal of creating a side dish that was mayo free and paleo friendly, I swapped the usual white potato for sweet, and loaded in my favorite flavors. The slight heat from the jalapeno is complimented by the sweet combination of the Dijon and honey sauce. And obviously bacon is added because bacon. This potato salad is delicious, whether served hot or cold.

Bacon Dijon Sweet Potato Salad

  • 2 large sweet potatoes, diced (you can peel them if you don't like the skins)

  • 5 strips of bacon, cooked and crumbled

  • 1/2 jalapeno, diced

  • 1/4 white onion, diced

  • 1/4 cup Dijon mustard

  • 2 tbs honey

  • 2 tbs olive oil

  • Parsley to garnish

  • Salt and pepper to taste

  1. Add the sweet potatoes to a pot of boiling water. Cook until fork tender. Once finished, drain the water and set aside in a large bowl to cool.

  2. In a small bowl, mix together the Dijon, honey, olive oil, and salt and pepper.

  3. Combine the sweet potatoes, onion, jalapeno, bacon, and Dijon mixture to coat the potatoes.

  4. Garnish with parsley, and serve hot or cold.
