Peanut Butter and Oreo Truffles

 

Andy and I have come a long way since our first Valentine's Day spent "together". Back in 2012 I think it was a quick Skype date late that night as we still had 1800 miles between us and were juggling our crazy schedules and a two hour time difference.

One thing that has remained consistent over the years is that I always bake some type of Valentine's treat for him. We're aren't big on going over the top for the holiday, so baking for him seems like the perfect way do something without breaking the bank. And with being a food blogger, it kind of makes sense that this would be my love language.

 
 

This year I mixed things up and made him these peanut butter and Oreo truffles. Something I learned early on is that the way to Andy's heart is with peanut butter and chocolate, so I've made some variation of the flavors every year. Previously it's been peanut butter cookies with Reece's cups inside, chocolate covered strawberries with peanut butter drizzle, or the one year we were traveling separately and I cheated and packed him a bag of mini peanut butter cups.

Andy was a huge fan of these truffles though. They're not overly sweet and are small enough that you could eat one without feeling guilty or like you're in a sugar coma...although that won't stop Andy from eating about 5 in one sitting.

 
 

Peanut Butter and Oreo Truffles

  • 1 package of cream cheese, softened
  • 1 package of Oreos
  • 4oz. box of baking white chocolate
  • 1 cup smooth peanut butter
  1. In a food processor, blend all but 4 of your Oreos until they are crumbs.
  2. Add in the softened cream cheese and mix until fully combined.
  3. Roll out small balls of the mixture and place on a baking sheet lined with wax paper.
  4. Place in the freezer for about 30 minutes.
  5. Set up a double broiler on your stove, with the white chocolate and peanut butter in the pot to melt.
  6. With the 4 Oreos you set aside, remove the icing in the center and place the cookies in a sealed ziploc. Smash the cookies with a spoon until finely crumbled.
  7. With each Oreo ball, dip it into the melted peanut butter mixture until covered. Place on the wax paper and sprinkle with the Oreo crumbs.
  8. Repeat for the remaining Oreo balls, then place in the freezer to set.
